First vegetables off of our farm this year are radishes. Also green beans but I didn’t get a picture of them. These are red radishes planted around 45 days ago.
In the photo I am preparing to mash the radishes. Then I cook sausage and wilt the greens into that while it cooks. Then I mixed the greens and sausage with the mashed turnips. It was very good if one likes a strong but less bitter mustard green flavor.
How do you mash them? Mine would resist methods typical for potatoes.
Bake or boil them. Boiling is the easiest to get right but unless you drain them a very long time it turns out more watery than I like. Boil for 6 or 7 minutes then drain and mash. Baking is 425 for 25 or 30 minutes turning halfway. Use oil to keep them from drying out. After I have softened the radishes I mash and add butter and heavy cream until I get the consistency I like.
Ohh, I’ve never had mashed radishes. Sounds interesting.
