Rice and Beans with Coconut Milk Recipe Prep Time: 10 minutes Cook Time: 35 minutes Total Time: 45 minutes Course: Dinner Plate Cuisine: Caribbean Servings: 4 Ingredients 1 1/2 cups long grain white rice 1 can coconut milk 2 cups chicken broth 1 can red beans, drained 1 can pinto beans, drained 1 chicken bouillon cube, dissolved in broth 2 cloves garlic, minced 1 tbsp butter Instructions In a large pot over medium-high heat, melt the butter and sauté the minced garlic until slightly golden. Remove from the pot. Add the rice, coconut milk, chicken broth, and both types of beans to the pot. Stir to combine. Cook uncovered until the liquid evaporates. Cover the pot, reduce the heat to medium, and cook for 12 minutes. Stir the rice with a large spoon, then fluff with a fork to separate the grains. Continue cooking for another 15-20 minutes until the rice is soft. Serve as a side dish and enjoy! This dish pairs well with grilled meats or can be enjoyed on its own as part of a vegetarian meal. Enjoy your cooking!
